Scrambled Eggs with Tomato Recipe

Ingredients

  • 6 eggs
  • 2 large tomatoes
  • 2 tablespoons of sunflower oil
  • 1 teaspoon of chopped fresh chives
  • 1 chopped garlic clove
  • Merkén (Chilean spice)
  • Salt
  • Pepper

Preparation

  1. Wash and peel the tomatoes, chop into medium pieces, optionally remove the seeds and reserve on a plate with their juices.
  2. In a medium bowl, add the eggs, chopped chives, season with salt and pepper to taste, and gently mix everything with a fork.
  3. Add a drizzle of oil to a large skillet and heat over medium heat. Add the chopped garlic and sauté for a couple of minutes, stirring with a wooden spoon. Reduce heat to low, incorporate the tomatoes with their juices and cook slowly for about 5 minutes until the tomatoes darken in color.
  4. Uniformly add the beaten eggs and cook for about 3 to 4 minutes, gently integrating everything with a wooden spoon, without stirring too much, until the eggs reach the desired doneness. Taste and adjust flavors if necessary. Remove from heat and keep covered.
  5. Serve the eggs with tomato immediately, alone or accompanied by good homemade bread or even as a side dish for other healthy meals, and optionally sprinkle with a pinch of merkén.

Use fresh tomatoes and eggs at room temperature. Always ensure that the eggs are fresh and optionally wash them under cold running water before cracking to avoid cross-contamination.

Eggs with tomato are a very flexible base recipe to which you can add various ingredients according to your own taste, like onion, ham, bacon, or even some grated cheese.

If you use cherry tomatoes or any other soft-skinned tomato, it’s not necessary to remove the skin and/or seeds.
