Chilean Wine Nougat Recipe
Ingredients
1. Syrah Wine Nougat
- 150 ml of Syrah red wine
- 100 g of sugar
- 3 egg whites
- 3 black peppercorns
- 1 clove
- 1 orange peel
- ½ cinnamon stick
- ½ cup of sliced and toasted almonds
- A pinch of salt
2. Late Harvest Wine Nougat
- 150 ml of Late Harvest wine
- 50 g of sugar
- 3 egg whites
- 2 cardamom pods
- 1 star anise
- 1 lemon peel
- A pinch of salt
Preparation
- Beat the egg whites with a pinch of salt until stiff peaks form. Once you start beating the egg whites, do not stop, and continue until the meringue is hard and firm, and a spoonful of the mixture turned upside down does not fall.
- While you are still beating, make the syrup with Syrah wine, sugar, cloves, cinnamon, peppercorns, and orange peel. Cook until it thickens to the consistency of syrup and is bubbling. Strain through a fine sieve.
- While continuing to beat and when the meringue is already stiff, gradually add the wine syrup to achieve a velvety texture.
- Then, using a pastry bag, fill the glasses in which you will serve the dessert, add the toasted almonds, and serve immediately.
- Use the same method to make the Late Harvest nougat, and in this case, serve it with a mixture of fresh berries or halved figs.
