Ingredients
- 500g of fresh digüeñes mushrooms
- 1 medium onion
- Fresh cilantro
- Lemon juice
- Safflower oil
- Salt
- Pepper

- In a large bowl, wash the digüeñes mushrooms thoroughly with plenty of cold water, then dry them on a clean cloth or paper towels and cut them into quarters. Set aside.
- Dice the onion into small cubes and soak it in water with salt if necessary. Set aside.
- In a large salad bowl, add the chopped digüeñes mushrooms, diced onion, and freshly chopped cilantro.
- Add plenty of lemon juice, safflower oil, and season with salt and pepper to taste. Gently toss with a spoon to combine the flavors.
