Ingredients
- 4 large melons
- 4 cups of sugar
- 1 lemon
Preparation
- Cut the melons in half, remove the seeds and fibers, peel, cut the pulp into medium cubes, and reserve in a large pot.
- Add ½ cup of water, cover the pot, and cook over medium heat for about 5 minutes. Reduce heat to low and continue cooking, stirring occasionally, until the pulp is very soft and disintegrated, about 20 to 30 minutes.
- Place the melon pulp in a clean cloth or a fine filter over a strainer, without pressing, and let the melon juice decant completely by gravity to avoid cloudiness.
- Reserve the juice in a medium pot and add 1 cup of sugar for every 2 cups of melon juice. Heat over medium heat, bring to a boil, reduce the heat to low, and maintain – removing any foam that forms on the surface – until the mixture acquires the consistency of a liquid honey, keeping in mind that it will thicken a bit more as it cools.
- Incorporate the lemon juice, stir until integrated, and pour the hot mixture into sterilized and airtight jars. Cool to room temperature and keep refrigerated until consumption.
- Serve the melon honey as a condiment with toast, flans, pancakes, or all kinds of homemade desserts.
