Mussels in Oil Recipe
Ingredients
- 2 kg of unopened mussels
- 400 ml of white wine
- 2 tablespoons of parsley
- 2 teaspoons of paprika
- 1 clove of garlic
- Olive oil
Preparation
- Clean the mussels in cold water with the help of a kitchen brush and discard those that are open.
- In a large pot, add the whole mussels, chopped garlic, white wine, paprika, and parsley, cover the pot and cook over high heat for about 3 minutes, turn off the heat, and discard those mussels that have not opened. Let it cool.
- Remove the mussels from their shells with the help of a fork, gently, without breaking them apart, and distribute them without pressing into clean and sterilized glass jars.
- Fill the jars with olive oil to the top, seal tightly, and store in a cool, dry place until ready to consume.
- Serve the mussels in oil alone, as an appetizer, or as an accompaniment to another main dish.
