Preparing quinoa salad is very easy, with a cooking method similar to that of rice but using an additional measure of water, which you can then accompany with different fresh or cooked vegetables such as corn, carrots, olives, and avocado.

Quinoa and Vegetable Salad recipe
Ingredients
- 100 g raw quinoa
- 40 g cooked corn
- 12 cherry tomatoes
- 12 large olives
- 1 cooked carrot
- 1 diced avocado
- Olive oil
- Merkén (Chilean spice)
- Salt
Preparation
- Thoroughly rinse the quinoa in cold water to remove any impurities and bitter compounds (saponin), then place it in a small pot and cover with 250 ml of boiling water.
- Cook over low heat for about 20 minutes or until well cooked and the water has evaporated. Remove from heat and let cool to room temperature.
- Transfer the cooled quinoa to a large bowl and add the cooked corn kernels, cherry tomatoes cut into quarters, Azapa olives, cooked carrot, and diced avocado.
- Drizzle with olive oil and sprinkle with salt to taste. Optionally, add a pinch of Merkén, and gently toss everything together with a wooden spoon to combine.
- Serve the quinoa and vegetable salad immediately, fresh, as an appetizer, or as a side dish with a main course.
