Chanfaina is originally made from cooked and chopped lamb liver, which is then used to prepare a stew incorporating green beans, pumpkin, potatoes, and tomatoes, among other ingredients.

Ingredients
- 500 g lamb meat
- 200 g green beans
- 100 g pumpkin
- 4 large potatoes
- 4 onions, sliced
- 3 tomatoes, chopped
- 1 carrot, chopped
- 1 garlic clove, chopped
- 1 bay leaf
- ½ green bell pepper
- ½ cup of rice
- Spices
- Paprika
- Salt
- Pepper
Preparation
- Wash the lamb liver and place it in a large pot, cover with plenty of water, and add a teaspoon of salt to taste. Cook over medium heat for an hour or until tender, without covering the pot.
- Remove the liver from the water and cut it into small cubes of 1 centimeter, as for a carbonada. Reserve the cooking broth.
- In a large pot, add a little oil and heat over medium heat. Add the onion, bell pepper, and carrot, and sauté for a few minutes until the onion appears translucent.
- Add the chopped garlic, bay leaf, complete seasoning, paprika, salt, and pepper to taste, and mix everything well. Incorporate the chopped liver, chopped potatoes, and green beans along with the pumpkin. Add the cooking broth to cover everything and fill with water if necessary. Adjust seasoning, cover the pot, and cook over medium heat until the pumpkin and potatoes are halfway cooked, about 10 minutes.
- Add the rice, stir everything, and cook covered for another 10 minutes approximately, until the rice and vegetables are cooked. Serve the lamb chanfaina hot, immediately, in a wide and deep plate.
