Chilean Oven-Baked Albacore recipe
Ingredients
- 4 albacore fillets
- 100 ml white wine
- 6 bay leaves
- 2 onions
- 1 lemon
- Extra virgin olive oil
- Oregano
- Salt
- Pepper
Preparation
- Wash and clean the albacore fillets, removing any traces of bones. Set aside and preheat the oven to 180°C (356°F) for 10 minutes.
- In a medium bowl, combine lemon juice, olive oil, and white wine. Add a bit of oregano, season with salt and pepper to taste, and mix to integrate. Submerge the fillets, distribute the marinade evenly, and let it rest for 10 minutes.
- On a baking tray lined with aluminum foil, distribute the onions cut into julienne strips and the bay leaves. Place the albacore on top and pour the marinade over, being careful not to overflow the juices. Close the aluminum foil and bake in the oven for 40 minutes or until well-cooked.
- Serve the oven-baked albacore immediately, accompanied, for example, by a vegetable omelet or mashed potatoes.
Tips for preparing albacore
Many oven-baked fish recipes often incorporate bay leaves since, in addition to imparting aromas and flavors, they act as a protective agent against indigestion, stomach acidity, and gas.
