How to make Nogada Beef Tongue?
For connoisseurs of Chilean cuisine, beef tongue is a delicate dish that is often underappreciated nowadays. However, it offers various options, from being enjoyed boiled, with walnut sauce as in this case, fried, or in a sandwich with mayonnaise.

Nogada Beef Tongue Recipe
Ingredients
- 2 kg beef tongue
- 400 ml milk
- 200 g peeled walnuts
- 2 tablespoons of flour or cornstarch
- 1 carrot
- 1 onion
- 1 bunch of assorted vegetables
- 1 green bell pepper
- 1 garlic clove
- Nutmeg zest
- Salt
- Pepper
Preparation
- Wash the beef tongue thoroughly, drain on a clean cloth or paper towel, and set aside.
- In a pressure cooker, add a little oil, the bunch of assorted vegetables, quartered onion and carrot, whole garlic, a piece of seedless bell pepper, salt, and sauté together for 5 to 10 minutes.
- Add the beef tongue and cook for about 60 minutes or until tender. Cool for a couple of minutes, peel, and cut into small strips of ½ centimeter thickness, and set aside.
- In a large pot, add 2 cups of the strained cooking juice from the tongue, milk, add nutmeg zest, flour or cornstarch to thicken slightly, and continue cooking for another 10 minutes.
- Transfer the mixture to a blender, add the walnuts, and blend at medium speed until smooth and homogeneous.
- Pour this mixture into a pot, add the reserved tongue strips, and cook over low heat for another 10 minutes.
- Serve the nogada beef tongue immediately, accompanied by white rice or mashed potatoes.
