Salmon and Mandarin Green Salad Recipe
Ingredients
1. Salad
- 200g fresh salmon
- 4 mandarins
- 1 ripe avocado
- 1 cup spinach
- 1 small green lettuce
- 1 small purple lettuce
2. Vinaigrette
- 4 tablespoons balsamic vinegar
- 4 tablespoons water
- 2 tablespoons extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dill
- Sea salt
- Black pepper
Preparation
- Remove the skin from the salmon and chop it into 1-2 centimeter cubes. Reserve in the refrigerator.
- Wash and tear the lettuce and spinach, drain and spin in a salad spinner. Set aside.
- Peel the mandarins, separate the segments, and remove the white parts. Peel and dice the avocado into small 1-centimeter cubes. Set aside.
- In a large salad bowl, add the lettuces and spinach, incorporate the mandarins, avocado, and gently toss everything.
- In a medium bowl, mix balsamic vinegar, olive oil, Dijon mustard, Worcestershire sauce, dill, water, salt, and pepper to taste. Stir to combine.
- Pour the vinaigrette over the salad bowl and mix well with wooden spoons. Let it rest for a couple of minutes to blend aromas and flavors.
