Chicken and Bell Pepper Sandwich Recipe

Ingredients

  • 2 boneless chicken breasts
  • 6 slices of white bread
  • 1 cup of mayonnaise
  • 1 carrot
  • 2 red bell peppers
  • 2 cloves of garlic
  • 2 sprigs of thyme or celery
  • ½ roughly chopped onion
  • Salt
  • Pepper

Preparation

  1. Preheat the oven to 200°C (392°F) for at least 10 minutes.
  2. Wash the bell peppers, pat them dry with paper towels, and place them on a baking tray lined with aluminum foil. Reduce the temperature to 180°C (356°F), drizzle with olive oil, sprinkle with a pinch of salt, and bake for about 50 minutes or until tender. Remove from the oven, let them cool, and peel off the skin. Finely chop and set aside.
  3. Heat a medium saucepan with water, salt, and cook the chicken breasts, herbs, chopped onion, garlic, and carrot for 10 to 15 minutes or until the chicken breasts are cooked through. Remove from the broth, cool, and shred.
  4. In a large bowl, add the shredded chicken, 4 tablespoons of roasted bell pepper, mayonnaise, and mix all the ingredients well. Add some of the chicken cooking broth until you achieve the desired texture.
  5. Season with salt and pepper to taste and set aside. On a slice of bread, spread half of the chicken mixture, cover with a second slice, and spread the remaining mixture on top.
  6. Finally, cover with the third slice and press gently to firm up the sandwich. Cut the chicken and bell pepper sandwich into desired portions and serve immediately, cold.
