Ingredients
- 12 scallops in their shells
- 100 g mantecoso cheese
- 100 g Parmesan cheese
- 100 ml white wine
- 50 g butter
- 50 ml heavy cream
- Lemon juice
- Chopped fresh parsley
- Salt
- Pepper
Instructions
- Wash and carefully open the scallops, shell them, and remove any impurities. Place 12 half shells on a baking tray, place a clean scallop on each shell, and set aside.
- In a medium-sized pan, add the butter and heat over medium heat. Sauté the finely chopped garlic for a couple of minutes, then add the cream and white wine. Season with salt and pepper and add the chopped mantecoso cheese. Heat until melted, stirring to mix everything well.
- Pour 2 tablespoons of the cheese sauce over each scallop on the baking tray and top with grated Parmesan cheese.
- Place the tray with the scallops in a preheated oven at 200°C (392°F) for about 10 minutes or until the cheese on the surface is slightly golden and gratinated.
- Serve the Parmesan scallops immediately while hot, optionally drizzling with a few drops of lemon juice, sprinkling with chopped fresh parsley, and pairing with a well-chilled white wine.
