Recipe for Chilean Pickled Golden Chili
Ingredients
- 12 green crystal chilies
- 2 bay leaves
- 1 clove of garlic
- Apple cider vinegar
- Cold boiled water
- Salt
- Pepper
Preparation
- Wash the chilies thoroughly in cold water and carefully pierce them with a fork without breaking them. Drain and set aside.
- In a medium saucepan, add 2 liters of water and bring to a boil. Immerse the chilies, pressing gently to ensure the liquid floods them through the perforations, and cook for 4 to 5 minutes. Turn off the heat, remove the chilies from the boiling water, cool, and drain until all the water inside them is released. Set aside.
- Prepare clean and sterilized jars and distribute the chilies inside them, without pressing too hard, adding the unpeeled garlic clove, bay leaves, salt, and pepper in an alternating manner.
- In a bowl, mix 3 parts of cold boiled water with 1 part of white wine vinegar or apple cider vinegar as needed. Pour into the jar to cover the chilies, seal, and store in a cool place for at least 1 month, where slowly, over the days, they will begin to acquire a bright yellow color.
- Serve the pickled golden chilies alone or as an accompaniment to any typical Chilean dish, main dishes, or salads.
