Ingredients

  • 1 kg (2.2 lbs) clams
  • 500 g (1.1 lbs) mussels
  • 500 g (1.1 lbs) razor clams
  • 500 g (1.1 lbs) chicken drumsticks
  • 500 g (1.1 lbs) potatoes
  • 250 g (0.55 lbs) smoked pork ribs
  • 3 whole garlic cloves
  • 2 onions, quartered
  • 1 large sausage
  • 1 liter (4 cups) water
  • 1 red bell pepper
  • ½ liter (2 cups) white wine
  • Fresh oregano
  • Salt
  • Lemons

Instructions

  1. Place all the shellfish in a large container. Clean thoroughly, brushing and rinsing to remove impurities. Cut the smoked pork ribs into pieces and set them aside with the chicken drumsticks. Reserve everything.
  2. Peel the potatoes and cut them into quarters. Slice the bell pepper into julienne strips, chop the onion into large cubes, and peel the whole garlic cloves.
  3. In a large pot, layer the potatoes, onion, garlic, and bell pepper. Add the smoked pork ribs and then the shellfish. Pour in the water and white wine, cover with cabbage leaves, and close the pot with a lid.
  4. Bring to a boil, reduce to medium heat, and cook for 45 minutes. Turn off the heat and let it rest for 15 minutes without removing it from the stove.
  5. Serve the seafood stew immediately, including a bit of each ingredient on the plate. Drizzle with some cooking juice, and optionally serve a small cup of the broth on the side.
