Stuffed Avocado with Chicken recipe

Ingredients

  • 3 large avocados
  • 3 tablespoons of cream cheese
  • 1 bone-in chicken breast
  • 1 natural yogurt
  • 1 stalk of celery diced
  • 1 tablespoon of chopped chives
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of cream (optional)
  • Salt

Preparation

  1. Boil water in a medium-sized pot over high heat, add the chicken breast, and cook for about 15 to 20 minutes or until fully cooked. Carefully remove the chicken from the pot and let it cool to room temperature.
  2. Transfer the chicken breast to a large bowl, cut it into approximately ½-centimeter cubes, and set it aside.
  3. In a bowl, mix the celery, chives, mustard, cream, natural yogurt, and cream cheese. Add the chopped chicken and mix everything well, seasoning with salt to taste.
  4. Finally, peel the avocados, cut them in half, and gently remove the pit while preserving the shape.
  5. Fill each avocado with the chicken mixture and serve immediately, accompanied by some lettuce leaves and chives.
